Delicious Artichoke Pizza Recipe

Artichoke and Tomato Pizza

Ingredients –

4 large roma tomatoes, seeded and chopped
½ teaspoon salt, divided
½ cup ricotta cheese
½ cup Asiago cheese, grated and divided
2 Tablespoons fresh basil, chopped
¼ teaspoon freshly ground black pepper
1 pound pizza dough, thawed
2 teaspoons basil flavored olive oil, divided
1 cup mozzarella cheese, cubed
6 ounce jar marinated artichoke hearts, drained

Preparation:

Combine chopped tomatoes and ¼ teaspoon salt in a stainless steel strainer. Set them aside to let excess liquid drain.

Preheat oven to 425 degrees Fahrenheit.

Mix together ricotta cheese, ¼ cup Asiago, basil and the remaining salt and pepper in a small bowl.

Roll out the pizza dough until it is 12 inches in diameter.

Drizzle 1 teaspoon basil oil over the crust and spread it evenly with the ricotta mixture.

Scatter half of the tomatoes and half of the mozzarella over the pizza.

Arrange the artichoke hearts on the crust and top with the remaining tomatoes and mozzarella.

Drizzle the remaining olive oil on the pizza and let it bake for 15 minutes.

Sprinkle the remaining Asiago cheese on top and return the pizza to the oven for another 5 to 10 minutes until the crust is golden and the cheese is melted.
